Ingredients8 garlic cloves, chopped
400 ml vegetable stock
4 tbsp miso paste
4 tbsp oyster sauce
2 tbsp honey
1 tbsp unsweetened black soy sauce
400 g lamb chops, trimmed of fat and cut into bite-size pieces
240 g bok choy, leaves trimmed
200 g straw mushrooms, or any fresh mushrooms in season boiled for 2 minutes
and drained
3 spring onions cut into 5 cm (2 inch) lengths
1 red chilli, seeded and finely sliced
1 pinch ground white pepper
MethodIn a heavy wok, stir-fry garlic in vegetable stock. Once fragrant, add miso paste, oyster sauce, honey and unsweetened black soy sauce. Add lamb and stir-fry for 3-4 minutes, or until half cooked, and add bok choy leaves and cooked mushrooms. Once bok choy is soft and lamb is well cooked, sprinkle with spring onions, red chilli and ground white pepper. Remove from heat and serve with brown rice.

MethodIn a saucepan, mix all the ingredients together over a medium heat. Bring to the boil and simmer for 5 minutes, or until reduced by half. Drain, discard lemongrass and allow sauce to cool.
Roasted Chicken - Ingredients150g lemongrass, pressed and roughly chopped
480g chicken breast, skin removed
20g roasted sunflower seeds, to garnish
20g lemongrass, finely sliced diagonally and baked at 180 c for 10 minutes, to garnish
MethodMix marinade and chopped lemongrass, add chicken and marinate for 30 minutes. Place chicken in a shallow baking tray and bake in the oven at 180C for 10 minutes. Remove the chicken from the baking tray, slice and place on a plate, pour sauce over, garnish with sunflower seeds and baked shredded lemongrass, and serve.
Note: If the sauce has become too thick add a little vegetable stock to it in the baking tray and simmer before serving.

Then there are Ayurvedic treatments, wraps, yoga even Botox at the Oasis Spa, and if you so desire, then your own Personal Trainer, and the daily treatments are part of the all inclusive vacation at this lovely all inclusive resort.
The food at this St Lucia All Inclusive Vacation is varied and in the main exceptionally good. The main dining room is the Cariblue, then there is a casual buffet restaurant, a deli, and the top of the range Tao Restaurant. You will be pleased to note that dress standards are in place and enforced, which isn’t always the case in luxury resorts.
Well over 85% of guests polled expressed satisfaction with BodyHoliday at LeSport. Amongst the comments were the fact that guests were simply unable to do everything they wanted to do because there were so many options. The food got a generally very high rating, especially the Tao which needs booking early. There are a few of the entrees which are extra charge so be warned.
